shenanigans, so all I did was finish a book, pay a bill and make a quick trip to a couple stores--one for groceries, one just to look at some shoes (nothing I liked in my size...actually, there was NOTHING in my size, now that I think about it).
Dinner tonight was...no, not corned beef and cabbage. I don't care for either of those; however, I did try my hand at colcannon, which is an Irish dish consisting of mashed potatoes, greens and onions. Recipes vary; most call for cabbage but some use kale, and the onion can be green onions or leeks. I've never attempted to cook with leeks before, so I went with cabbage (yeah, I know, but Dad likes cabbage) and leeks. It came out pretty good though not good enough that I want to add it into regular rotation. Instead of corned beef, I just tossed some frozen fish filets in the oven and also had butternut squash. Bff's neighbor make a ton of Irish soda bread, so yesterday bff brought me a loaf...it's delicious!
