I watched the first two seasons on AMC via cable. And then — AMC made the third and final season of this trilogy only available if you subscribed to their AMC+ streaming service, which I did not do. Eventually the third season showed up on Max for a limited time and I watched it there. I had a long break between S1 & 2 and S3. But I was so angry at AMC for this move that I would have just forgotten about ever watching S3 rather than be manipulated by AMC like that. What airing S1 and S2 of a trilogy and then trying to make me subscribe to watch S3 did do is make me hesitant to watch anything on AMC. As you can probably tell, I’m still miffed about that.
But to answer your question: I did eventually watch the whole thing and enjoyed it. I bet the books are good.
