lives in a NYC apartment, the idea of having two full kitchens in one house is a concept that I’m having trouble grasping. I can kind of start to imagine somewhat of an outside kitchen (though not a full outside kitchen) on the patio with the bbq grill.

The reasons I've seen houses have a second full kitchen is because they've

1) Created a mother-in-law type suite in the house and the person there might want an independent kitchen.

2) They like to entertain. Some people have full outdoor kitchens in the back instead of just a few things. And in some big houses, they have a two-tiered kitchen with a 'front' and a 'back.' The front is part of an open concept and connected to the living room. It has all of the equipment but it's the mingling kitchen. The back part is right behind it and smaller, with perhaps another oven, fridge...etc. That's where the real grunt work gets done outside of prying eyes.
