They are green but have a very different flavor than bell peppers. Poblanos are what are usually used to make chile rellenos, which I love stuffed with cheese and shrimp. I like poblano pepper in eggs too. They add so much good flavor to anything I cook with them. I’ve never tried it but I bet poblano peppers would be a great pizza topping. I’m going to have to try that.
