It was a snack at a movie theater in Montreal...anyways, cheese curds are almost the same as little cubes of cheese, except that they're usually more rounded in shape (and less uniform in size), and they're squishier. Think the consistency of cottage cheese--that's basically cheese curds. Cheese curds can be, I think, almost any kind of cheese but are often some type of cheddar. When I think of cheese curds, I think poutine, I think cottage cheese and I think the deep fried cheese curds served at Culver's, which is a Midwest fast food chain featuring an extensive menu of burgers, chicken sandwiches, fish, salads, homemade ice cream...and in a nod to their Wisconsin origin, deep fried cheese curds that are delightful. The first Culver's I ever ate at was over an hour's drive away...when they put one in just a few towns over, I was thrilled (I don't go there that often though...too many other options around).
